A few years ago, we were eating at a rather chic restaurant in Chicago, and the server brought to our table a plate that wasn’t listed on the tasting menu. It was foie gras, which is hardly an unusual dish for a restaurant. But the server, with a smile, made a point of telling us that the item, which he didn’t identify, was “compliments of the house.”
For awhile, selling foie gras on a restaurant menu was illegal in Chicago. That’s no longer the case. But the debate about foie gras, and the practice of overfeeding geese or ducks to produce an enlarged liver, is far from over.
